Description
A 1974 graduate of the Culinary Institute of America at Hyde Park New York, Ken's professional career spans 31 years. He has been Executive Chef and Director of Food and Beverage in some of Vermont's finest hotel resorts & Country Inns including Top Notch At Stowe, The Equinox Hotel & Spa, and The Arlington Inn. He has worked in the Caribbean, Instructed Culinary Arts, and was Executive Chef and Club House Manager at one of North Carolina's premier Lake developments before opening Atlantica. His cooking technique is rooted in French technique, yet is contemporary in taste and presentation with seasonal and global influences. Ken seeks out purveyors of the finest and highest quality ingredients, both organic and sustainable. His love of food, dedication to the hospitality industry, and desire to share good food is his mantra. Chef Ken has been featured on a segment of "Food Finds" on the Food Network and will soon appear on "The Fretz Kitchen".
In 1994, Del completed her Master’s Degree in Business Geography at UNC-Charlotte. Even though her subsequent career in market analysis and site review for First Union (now Wachovia) was complete and rewarding, she did not hesitate to join her husband in the decision to purchase Atlantica. Now, she wears many hats as owner and operator. Del maintains account payables and receivables, coordinates all aspects of the business including advertising, marketing, interior & tabletop design & purchases, staffing decisions and supports Ken in menu creation and purchasing. She has also instituted a successful wine service and staff training program which has resulted in a 98% staff return rate. Her interest in food and wine and professional business practices has provided many rewarding experiences during her first five years as a restaurateur.
