Big Woods Bison was established in 1994 by Dean and Judy Schwake on a farm that has been in the family for 140 years. The Schwakes raise 120 head of bison on the 200-acres in Nerstrand, Minnesota. They feed the bison hay and corn silage and do not use any growth hormones or antibiotics. Consequently their bison do not have the gamey taste that many wild animals, like deer, often have. The Schwakes are active in the bison farm community; they are members of both the National Bison Association and the Minnesota Bison Association and Dean Schwake is the SE Regional Director and Promotions Committee Chairman of the Minnesota Bison Association
