- La Carreta opened its doors July 24th, 1998 by Saul Rubio, an entrepreneur from Mexico who wanted an opportunity to offer people great authentic Mexican cuisine and friendly service. Saul worked in the restaurant industry in Pensacola, Florida, and after moving to Louisiana decided that it was time to open his own Mexican restaurant. The name of the restaurant comes from the Mexican town of Queretaro. La Carreta is a common name for restaurants in this town, so Saul decided to bring the name to the US along with the same atmosphere found there.
