Description
Caviar comes from Persian word Khaviar which means "bearing eggs". It also refers to the processed roe from 3 sturgeon fish species of Beluga, Ossetra & Sevruga found in the Caspian Sea. Other roes extracted from salmon, whitefish, paddlefish and lumpfish are also referred as caviar. These eggs are gently harvested carefully, washed and salted for flavoring and preservation.
NUTRITION: It has about 250 calories per 100 gr (3.5 oz.), rich in protein, 25 gr. per 100 gr., fat content of 16 gr. per 100 gr., low cholesterol content of 4.2 gr. per 100 gr. and low in sugar of 4 gr. per 100 gr. However, it has high contents of mineral salts, such as sodium, potassium, phosphate, calcium, including vitamins A, D, C, B2, B12, and B44.
Sometimes caviar is pasteurized and vacuum packed for longer preservation. However, it looses its taste, flavor and texture considerably. Fresh caviar may be stored in refrigerator for 30 days; once opened it must be consumed within a few days. For serving always use mother of pearl caviar spoon.
