Membership in the ACS is constantly growing, with memberships available at the Associate, Individual, Small Business, Corporate Sponsor and Multi-Unit Retail levels. ACS members identify themselves according to the following professional demographic:
Through the work of its standing committees, the American Cheese Society represents the interests of its members by working with organizations that seek to protect the production and heritage of American cheeses.
· With Oldways Preservation and Exchange Trust , the American Cheese Society co-founded the Cheese of Choice Coalition, which seeks to preserve the production and sale of raw milk cheeses within the United States, as well as the importation of raw milk cheeses from around the world.
