"Over 25 years ago I started making my own wine. Used to enjoying a bottle of reasonable commercial wine with the evening meal on a regular basis , I found that homemade wines from kits were lacking in distinction and body. Getting an endless
variety of expert opinions on basic issues such as "choosing a winejuice" "when & how to rack (syphon) a wine" "temperatures" "clearing" "when or should you filter a wine" "cork size & preparation" etc, I began to research and experiment with the wine making process, additives and available product. I made & aged different brands, usually dividing batches in two and treating each half differently to observe any variation that might occur due to water used, whether or not the wine was filtered, bulk and or bottle aged etc. For about 12 years sharing this experience with fellow home vintners through my retail supply business, I kept notes of vintners questions and problems, and recorded notes of the simplest way to produce the best possible wine from the winejuice chosen.
