- I have managed other caterer's functions when they overextended themselves
- as effortlessly as possible
- foreseeing any challenges with execution and logistics. For instance
- many caterers (or food vendors) submit proposals with beautiful menus
- table decor and great pricing
- but never calculate for the necessary staff to accommodate load-in and strike time restrictions. I can dissect their proposals and validate price differences to the event planner. I assure that all is ready for a punctual and seamless execution
- so the planner can focus on the other aspects of the event. Sometimes
- the egos of caterers and planners may clash under a bit of pressure. I am merely a buffer. With over 21 years of off-premise catering business experience
- I bring quite a bit of insight to the table; dealing with changing traffic patterns en route
- staff who may need to be shown an easier way to perform their jobs
- any "oops" in the kitchen. I have respect and empathy for the caterer
- but I am NOT the caterer
- I do miss being in the kitchen
- so about once a month I do a four course gourmet dinner party (hired by former catering clients). It's mostly for fun
- and a bit of pocket change. I always felt the most alive when I was selling for my own company
- and the most peaceful when I was in my kitchen preparing for the parties. I still enjoy a great reputation
- so I will also work on the teams of designers
- logical and cost-effective event solutions; well-networked throughout special events industry
