Thanks for visiting Great Cajun Cooking. My name is James Callaway. By day, I'm a software developer for a hydrographic survey company in Lafayette, LA. The only thing I really enjoy more than the computers is cooking. In November 1999, Donny Fontenot, a good friend, asked if I could build a website. Without any hesitation, I said sure.
