Description
Malt Whisky which is made by the Pot Still process and Grain Whisky which is made. Malt Whisky is made from malted barley only. Barley is allowed to germinate (malt) and is then dried (sometimes over a peat fire to give a smoky flavour) and mashed with hot water to make a hot sugary liquid called wort. Yeast is added to ferment the liquid to produce alcohol which is distilled out in a large copper Pot Still. This is a batch process. There are four types of malt whisky, named after the location where they are made, which are Lowland (southern
Grain Whisky is made from malted barley together with unmalted barley and other cereals and is distilled in a continuous process by the Patent Still (or Coffey Still) process. The wort is collected at a specific gravity lower than in the case of the Pot Still process. Also, the spirit is collected at a much higher strength after distillation.
Both Malt and Grain Whisky must be matured after distillation has been completed. The new spirit is filled into casks of oak wood which, being permeable, allows air to pass in and evaporation takes place. By this means the harsher constituents in the new spirit are removed and it becomes in due course a mellow whisky. Malt Whisky which contains more of these flavoury constituents takes longer to mature than Grain Whisky and is often left in the cask for 10 years or even longer
