Description
For the ice cream: 1/2 l. of sheep milk, 100 gr. of sugar, 50 gr. of glucose, 50 gr. Of powdered milk, 5 gr. of stabilizer.
For the crunchy topping: 75 gr. of icing sugar, 1 gr. of pectin, 50 gr. of butter, 25 gr. of glucose, 25 gr. of fruit juice, cacao powder, roasted and ground cacao beans.
To make the ice cream: Mix the sugar and powdered milk and add the stabilizer. Set aside. Heat the sheep milk and add the glucose. Set aside. Add the milk mixture and bring to the boiling point. Let stand for one hour. Pour the liquid through a fine strainer and place in the freezer for approximately 18 minutes.
