Every responsible food supplier is concerned with food safety and increasingly legislation exists to sharpen this interest. When there is a failure in food safety, it is almost invariably discovered too late. The impact on the consumer is considerable: impact on health and loss of confidence in their supplier: it all impacts reputation. The cost is high - sometimes unsustainable: compliance failure, loss of efficiency, productivity and profit; adverse publicity, expensive product recall, loss of reputation, increased cost of advertising and public relations to recover lost image.
Hazard Analysis and Critical Control Point forms the basis of the European Commission Hygiene Directive (93/43/ EEC) incorporating the Codex Alimentarius guideline, commonly known as the HACCP principles as it applies to the food and drink industry. It is a requirement in most countries and rapidly being established as legislation for the food and drink industry to demonstrate "Due Diligence ". The pressure for food safety is increasing - but help is at hand.
