It started a long time ago when I was young. I was teased because of my Hungarian heritage. (We all know how mean kids can be, even though they don’t mean it) My father would bring home Hungarian sausage (Kolbász) from the Hungarian Market in Delray, (Detroit) MI. Some of my friends would make fun of the sausage and the natural evolution of their teasing lead to calling me Johnny Kolbász. Thus, the name was born.

Years later in a 10th grade art class, a friend of mine asked me what Johnny Kolbász looked like. Not knowing myself, I sketched out a figure. It didn't look like anyone I knew, but it was entertaining. I kept that image in my memory and a few years ago I recalled it for my company Trademark. I added the colors of the American and Hungarian flags to signify my identity.

Around November1996, I got tired of eating store bought sausage. The junk in them made my stomach turn. By MDA (Michigan Department of Agriculture) Food law, sausage is allowed to be as much as 50% fat and 3% water! I couldn’t accept my family eating a food of poor standards. I wanted something better and of quality. I started experimenting, making my own sausage.
